This is a pie that everybody loves to eat! It’s flourless, thus gluten free yet so tasty… Yummy! It takes only 20 minutes to prepare and is my go-to-recipe when I need to serve something good and quick!

All you need is:

For the bed
50 g of butter
2 dl of almond powder
3,5 cups of crated cheese (e.g. gouda, emmentaler)

Melt the butter and mix it with the other two ingredients. Place the dough on the pie plate (⌀ 23cm) and pre-cook it for 10 minutes, while you prepare the filling.

For the filling
1 clove of garlic
half of an onion
150 g of spinach (I used frozen)
3 tbs of fresh dill
250 g of feta cheese
300 g of crème fraîche
3 eggs
salt & pepper

Sweat cut the onion in oil on a pan. Then add the frozen spinach and cook them for a few minutes. Add dill in to ten pan and then place it all together on the pre-cooked pie bed. Crumble the feta cheese on top.
Then mix the eggs and the crème fraîche at a separate. Add salt & pepper to the mix. Pour the whole thing on the spinach mix. Keep on cooking the pie for 20 minutes or until the top of the pie is coloured golden brown.
